Raw food is really about stripping down your life…taking it back to the basics. Even the more “elaborate” recipes really only involve a bit of food processing and prep, but in reality- the longer you stay on a raw diet, the more you crave totally simple food in its RAW form.
Here is an example of a VERY simple meal we’ve eaten a lot since embarking on this RAW JOURNEY!
KALE SALAD WITH CHERRY TOMATOES, CARROTS AND SUNFLOWER SEEDS.
DRESSING: TAHINI, NUTRITIONAL YEAST AND LEMON WHISKED WITH FILTERED WATER.
Here is my RAW PIZZA!!!
CRUST:
I made the crust from just 4 ingredients- tomatoes (chopped and seeded), ground flax, whole flax and himalyan sea salt. Blend these in a food processor and then spread out into a crust shape and dehydrate. These can be made into crackers too. This crust was delicious on its own!!!
SAUCE:
Then I added simple marinara (cherry tomatoes, sea salt, olive oil, basil- blended in a food processor).
TOPPINGS:
Spinach, shiitake mushrooms (marinated in rosemary and olive oil), olives, and COCONUT BACON!!!! I made the coconut bacon with the meat of 2 young coconuts marinated in olive oil and liquid smoke- then dehydrated for 8 hours.
My cousin decided to give his body a break and do a RAW FOOD 3 day challenge! I’m so stoked for him!!!! There are definitely some transitions and “detox” symptoms at the beginning on the cleanse. I can say after 2 weeks, I am showing NO signs of slowing down. I’m sticking w/ RAWness!!!! I feel fantastic, my mind is clear and my stomach has NEVER been flatter!!! LOL! My workouts are better than ever- I can really focus during Pilates and I’ve UPPED MY HAND WEIGHTS to 10 pounds!!!! I am just reading more and more about being RAW and quite mortified to say the least about some of my former dietary choices. Even as a vegan when I thought I was eating so healthy- there was MAJOR room for improvement. SOY? Did I really eat that much of it? YES, I did!!!!! It’s NOT good. In Asia where they eat small amounts of fermented and unprocessed soy, it’s beneficial- but here in the US- soy is GMO’d into oblivion and actually BLOCKS your body from absorbing protein. When going RAW, even for a short period of time I really recommend READING about it! Educate yourself and you will find out some amazing facts about nutrition, cellular structure, the truth about cooked foods etc…
I’m going to share my little message to my cousin here because I think it contains some good basics for starting a RAW FOOD CLEANSE!!
make your salads colorful- that way you know you are getting a mix of nutrients. a nice basic dressing is lemon, olive oil and garlic. you can throw in some herbs too. top it w/ sunflower seeds (unsalted and raw- you can buy in bulk) or crushed almonds or cashews. add sliced avocado (i like to sprinkle sea salt and black pepper on it) to get some added oomph and GOOD fat your body needs. you may feel a rumbling in your tummy because you’re giving it a “break” from digesting the “hard stuff”. i just ate a great big bowl of gazpacho. you can make it in a food processor or blender:
tomatoes, celery, cucumber, green pepper, red onion, garlic, lime juice, lemon juice, cilantro and parsley w/a little bit of water to soup-ify it.
How delicious! How guilt free! I have made this a few times in the past week for snack times and we can’t get enough. RAW FUDGE! All you need is:
Carob Powder
Raw almond butter
Coconut oil
Agave
I use about 2 tablespoons of almond butter, a teaspoon or two of carob powder, 2 tablespoons of agave and a smidgen of coconut oil . Here in Tennessee- my coconut oil turns to liquid in the summer months, so I just pour some in to blend all the ingredients in a bowl. This amount makes about 6 pieces of fudge. I fill up a 6 muffin tin and pop it in the freezer. Freezing it is essential- it makes it nice and chewy! So good!
